Six Capital Brewing - Aurora, CO

My son and I ventured to Colorado over Break.  Too bad I didn't pay as much attention to the weather as I should have.  Six hours after landing a massive snow storm overtook the state, dumping 20+ inches of snow across much of the state.  Before it hit, we stopped at Six Capital Brewing in Aurora.  I'm glad we did.  The name is a little odd, but the food and the beer were excellent.  The name is an homage to the six prior capitals of Texas before Austin finally became the last and final one.  I figured maybe the owner is from Texas, but no.  Who cares, I guess.  You can name your brewery anything you want for any reason.  Colorado is home to the fourth most breweries per capita and I knew it was going to be a good place to find good beer.

The first thing I will point out is the food.  My son got a brisket sandwich and upon seeing the sandwich, I immediately regretted not getting it myself.  It looked mouth-watering, piled high with succulent strips of brisket, and my son said it was about the best one he'd ever had.  Texans will be disgruntled over that, but the truth hurts.  Six Capital is a brewery that serves BBQ and you need to be good at BBQ to play in that realm.  They exceeded my expectations. Kudos to the Pitmaster.  I had their Chicken Bacon Ranch sandwich.  It was good, with smoked bacon, local bacon and homespun ranch on a Brioche bun.  I would definitely try the brisket, if I were you.  We also had some green chili Mac N Cheese.  Their menu is pretty well rounded with pulled pork, smoked wings, nachos and other morsels.

Now, to the beer.  I tried my security blanket, a red ale, called Hoppy Red.  It's a classic American red ale with three types of hops, Cascade, Centennial and Chinook.  It was toasty and malty with an IBU of 51 and I felt it drank smoother than a 51.  It was flavorful and paired pretty well with what I was eating.  I would drink this beer any time.  My next selection was off my normal pattern a little.  Normally, I don't drift off into the beers that experiment with foods that you don't associate with beer.  Now, peanut butter in beer has been around for decades, so this isn't anything mind blowing, but this beer intrigued me.  The description of the beer states it was made in honor of George Washington Carver for his revolutionary crop rotation techniques and his 300 uses for peanuts.  What got me was the last line, which says, This delicious American Stout has a case per barrel of Nutter Butter Cookies that create a well balanced and delicious beverage.   Wow, was this beer good.  Called Formula 300 - Nutter Butter, it is a Stout - Pastry beer with 48 IBU.  It smelled like Nutter Butter Cookies and it was fabulous.  It's everything you'd want out of a Stout.  Flavorful, smooth and satisfying.  My son isn't old enough to drink, but he wanted to try it.  I let him smell it, but that was all he got.   Two tries, two home runs for Six Capital, well three for the food.

The brewery got busier after we got there and I'm pretty sure the combination of awesome food and beer makes this place a winner.  My son knows I write a blog and he was perceptive to see that it appeared many of the patrons were well known to the bartenders and hostesses, which is a sign of loyalty.  I'd go there regularly if I was from the area.  If you like beer and like to eat good food while doing so, I recommend Six Capital Brewing very highly.
